I really enjoy a savory breakfast, and these breakfast quesadillas never disappoint! Especially when you can add all your favorite toppings. It’s a perfect meal for guests as they can choose their own toppings, making everyone happy. The Best Breakfast Quesadillas When you take a bite of these breakfast quesadillas, you’ll understand why I say they’re the best! These cheesy quesadillas are bursting with flavor first thing in the morning. The extra protein from the eggs and bacon will keep you satisfied and give you a great start to your day. These breakfast quesadillas are a fantastic way to sneak in some healthy veggies. Quesadillas are so versatile, you can make them just the way you like! Sometimes I sneak in some spinach and peppers for my kids. As long as they can dip their breakfast in salsa and sour cream, they’re happy! You can also serve these with homemade guacamole, salsa, or my easy Mexican rice if you really want to fill them up before school. Ingredients Needed For Quesadillas You only need a few simple ingredients! You probably already have them at home, so you can whip up these breakfast quesadillas first thing in the morning! Your family will love waking up to these delicious treats! Bacon: A tasty breakfast option! You can use sausage or turkey bacon if you prefer. Eggs: Perfect for scrambling. Milk: Adds creaminess to the eggs. You can use any type of milk you have on hand. Salt: For flavor. Pepper: I prefer cracked black pepper. Cumin: Adds a delicious Mexican twist. Garlic Powder: Enhances the flavor of the eggs. Onion Powder: Adds a subtle onion flavor without being overpowering. Flour Tortillas: I like using flour tortillas, but corn works well too! Shredded Cheese: A Mexican cheese blend complements the flavors in the quesadillas. Salsa: For serving on the side. Sour Cream: Also for serving on the side. Avocado: Sliced and ready to serve. Let’s Make Breakfast Quesadillas These breakfast quesadillas are super easy to make. Get the whole family involved by assigning tasks. While someone cooks the bacon, another person can scramble the eggs. Let everyone else prepare the toppings! It’s a great weekend breakfast where everyone can pitch in and enjoy. Cook the Bacon: Cook the bacon over medium-high heat in a large skillet until it’s just crispy. Place the cooked bacon on a plate lined with paper towels to cool. Reserve about ¼ cup of bacon fat and discard the rest. Once the bacon is cool, chop or crumble it into small pieces. Scramble the Eggs: In a medium bowl, whisk together the eggs, milk, and seasonings. Heat the reserved bacon fat in the skillet over medium heat and scramble the eggs. Remove the cooked eggs from the skillet and set them aside. Assemble the Quesadilla: Reduce the heat to medium-low and place a tortilla in the skillet. Spread ¼ cup of cheese on the tortilla, add about 1/4 cup of scrambled eggs on top of the cheese, and sprinkle 2 tablespoons of cooked, crumbled bacon over the eggs. Slice and Serve: Remove the quesadilla from the skillet, let it cool for a few minutes, then cut it into slices. Serve with salsa, sour cream, avocado, and salt and pepper to taste. Storing Leftovers Leftover breakfast quesadillas are perfect for a quick meal anytime! Reheat them in the air fryer for a quick fix, or use the oven for a crispy finish. Here’s how to enjoy leftover quesadillas: In the Refrigerator: Store leftovers in an airtight container or resealable bag in the fridge for up to 3 days. I recommend separating them with paper towels to prevent sogginess. In the Freezer: Individually wrap the quesadillas in parchment paper and place them in a freezer-safe Ziploc bag or container. Lay them flat in the freezer and store for up to 3 months.
