Ingredients Needed For Crepes
These perfect crepes call for simple ingredients you probably already have in your kitchen. Wondering about the difference between crepes and pancakes? Unlike pancakes, crepe batter doesn’t have a raising agent like baking powder or baking soda. Pancakes are thick and fluffy, while crepes are thin and flat, perfect for rolling or folding!

Crepes Batter

  • All-purpose flour: The best choice for crepes.
  • Milk: Adds creaminess and helps create a pourable batter.
  • Eggs: Large eggs work best.
  • Sugar: Adds a touch of sweetness.
  • Butter or Oil: Cooled and melted butter or oil.
  • Vanilla Extract: A splash of vanilla enhances the sweet flavor of these crepes.

Cream Cheese Filling

  • Cream Cheese: Tangy and delicious when combined with sugar.
  • Powdered Sugar: Thickens the filling and adds sweetness.
  • Whipped Topping: Makes the filling fluffy.

How To Make Crepes
You’re going to adore these perfect crepes! It’s easy and fun to make, especially with the family. My girls love helping me blend the batter in the blender and pour it into the skillet. This crepe batter is ready in minutes and packed with flavor from just a few simple ingredients.

Blend the Batter: Mix the flour, milk, sugar, eggs, oil, and vanilla until smooth. I use a blender and pulse until smooth, but you can also whisk it in a bowl.
Prepare the Skillet: Coat a medium nonstick skillet with oil and heat it over medium heat. Once hot, add about 1/4-1/2 cup of batter to the pan. You can use a crepe pan if you have one!
Add the Batter to the Skillet: Pour the batter into the center of the pan. Using a circular hand motion, spread the batter into a thin, even circle. For extra thin crepes, a crepe spatula comes in handy.
Cook: Cook on one side for 30-40 seconds, then flip. The surface will start to dry out, and small bubbles will form. Repeat with the remaining batter.
Cream Cheese Filling: If you’re making the cream cheese filling, beat the cream cheese and powdered sugar until smooth. Fold in the whipped topping. Spoon 2 tablespoons onto each crepe and roll it up.

Tips and Tricks
Crepes are a breeze to make! Don’t worry if your first few aren’t perfect – they’ll still taste amazing! Here are some tips to help you make perfect crepes at home:

  • Use a Hot Pan: Make sure your pan is really hot before pouring the batter.
  • Use a Small Amount of Batter: Pour just enough batter to coat the pan’s bottom completely before it sets.
  • Swirl the Pan Quickly: Tilt the pan quickly and carefully to spread the batter evenly.
  • Batter Tip: The batter is ready when you see plenty of bubbles on top. If not, tap the blender’s side to make the bubbles rise.
  • Chill the Batter: Refrigerate the batter for at least 30 minutes for perfect crepes.
  • Make Ahead: Crepes are great for making in advance! The batter keeps in the fridge for a day.
  • Topping Ideas: Berries and whipped cream are classic, but try bananas, Nutella, or lemon curd for a twist!
  • Savory Crepes: Skip the sugar for savory crepes.
